The Northern Regions

of China were home to not only the imperial courts of Peking, but also to the nomadic people of Northern Steppe and Mongolia.  With its cooler climate, wheat is grown successfully giving rise to many interesting noodles and bread.

The Western Regions

of China are largely unpopulated in the farthest west where ancient "silk path" nestled along from central Asia.  Further east, the climate varies from semi-tropical heat on lower plains in Szechuan area to frigid cold in rugged Tibetan plateau.  Farmers and rangers in these areas use nuts and spices in their meals to retain body heat and add flavor.

The Southern Regions

of China have a warn, tropical climate ideally suited to rice and vegetable growing with abundant access to coastal seafood.  Sauces are generally light to allow the subtle flavors of freshvegetables and meats to predominate the dishes.  Many of China's first emigrants to the West came from this area of the country in the late 1800's, bringing with them the cooking style that has long been popular in the United States.
